I'm just tired. And I'm due for a vacation. Will I get one? Absolutely not. At least not right away.
I made it through 2011 and I'm pumped for 2012. I've got a good feeling about this year. A good feeling. We'll see where the tide takes me.

Added some more cakes to our portfolio. I just love weddings.

Made this for some random girl. She wanted a gold cake. GOLD? Edible spray paint, it's awesome.

Oh my gosh, amazing. I was introduced to the tv show by Josh and Blakus, and I'm obsessed. It's just down right phenomenal. I can't get enough of it. I watch it over and over and over again.

My mom and I have a little obssession with Tiffany's.

Over the years, we've been collecting little items. First it

was a simple sterling silver necklace with the letter E and S...

cuz obviously we both had to have one. and don't forget mom's

sterling silver ring. Then I had to have the Tiffany blue

patent leather passport cover... with matching luggage tags.

I always wanted a letter opener... why not one from Tiffany's,

with my name engraved on it. The deck of cards were just so cute,

we had to have them. And how could we pass up the adorable

Tiffany's mugs. Hot chocolate would never be the same!

But so far, my favorite purchase yet...

A quick update from the train

It's been while since I've been on here, and since I have a few spare minutes, I thought I'd give you a quick update on what's been happening in my life.

WORK.

That's pretty much what I do all the time. I've been promoted to a supervising position, and spend a lot of time working night shifts. Which has had an enormous impact on my social life- I no longer have one. I also have been picking up shifts at the bakery with my mom, so I've been having 14 hour work days. But the money has been all worth it. haha.

Church... well I'm getting use to the new ward. I sure do miss the Old FHWard, but this new one isn't so bad... mostly because of BOY X, who I am secretly enamored by (though secret it isn't since pretty much everyone around knows).

Oh and I'm moving out! I've been wanting to move out for long time, and I've had a few opportunities, but always chickened out. There is something comforting and secure about living in my parents basement, rent free. But when Sadie invited me to be her roommate, well it was the right time for me to get out from under my parents wing. So in one month, I will officially be a renter. I'm pretty excited, and have fully accepted the fact that I will no longer have any money, that my grocery shopping will take place at my parents house, and that most of my meals will consist of whatever I can scrounge from work.

My life rocks.

I'm a little late...okay, a lot late, but I just wanted to thank everyone that sent birthday wishes to me. I had a great birthday this year, surrounded by so many great friends. I love that my birthday falls right next to Independence Day. Who wouldn't love having fireworks on their birthday!?

This year I threw a BBQ for myself and my good friend J.R. whose birthday is right next to mine. I had a blast planning it and was happy to spend a day with the coolest people on earth.

Here's a picture of the cake I did for the wedding last saturday. It's not my favorite and I don't think I did that great of a job on it, but it's what the bride asked for so I did my best. She wanted carrot and chocolate with cream cheese frosting. Let me just tell ya, I HATE cream cheese frosting. It is the worst to frost a cake with, and even worse to decorate with.

I want to thank all my fellow employees that have had to put up with me all weekend. Somehow I got roped into being some-what in charge of a crepe buffet for a wedding on Saturday. Along with that, I agreed to helping Nate with another crepe wedding that same day and don't forget I had to do the wedding cake for that one as well. Too much for one day?... Yeah, a little much. By the end of Saturday night, as we were cleaning up the remnant of a successful wedding, I crumbled into tears. Not out of anger, or sadness, just pure exhaustion. I was spent.

I owe so much to all those I work with. I know I'm never the easiest person to work with and I'm grateful for everyone that puts up with me.
Frederick, Christian, Kayla, Liz, Victor, Cam, Vanessa, and every other person at the LH... All of you are amazing.

The Superman Cake

Josh loves Superman, so for his birthday cake, I went with a Superman theme. Originally I was just going to make the logo for his cake, but then, I felt that was a little boring. So I went with this instead.

Now, the tie, it's a little weird. And it doesn't really look like a tie. That's alright though, Josh loved it.

Also, note to self. Blue frosting gets everywhere, and will dye anything it comes in contact with.

Midnight Obsession

So I've become a little obsessed with midnight showings. I don't care what the movie is, as long as there is a midnight showing of it, and I am there with a big bucket of popcorn smothered in butter. There's just something so fantastic about waiting until midnight to be one of the firsts to watch the movie, the dressing up, the atmosphere, the popcorn! I just love it! This summer has a great list of movies coming out: X-Men, Super 8, Transformers, Captain America, Harry Potter... I am so excited!

One Year Anniversary

I have never owned a car for one whole year.

When I moved home from New York, I bought Little Red. She was my favorite, and had a horrible death at the hands of me. She died only weeks before the year mark.

So I bought Jag Jr. I hated that car. It broke down on me twice, and it looked like an old man should be driving it. Our relationship only lasted 7 months.

Then came Sophie. She's not Little Red, but I love her just the same. She's had a few problems, but we're working through them. Today she's getting a new windshield, after her rear view mirror came off unexpectedly, taking a chunk of glass with it. It's her one year anniversary.

Today I got a notice from the Utah Motor Vehicle Registration Reminder, and was overcome with pride. I've never gotten one of those. I've never had to renew my registration.

So this is to Sophie the Car, for hanging in there for a whole year.

I feel like it has been a long while since I have made a cake. I mean a real legit, awesome, one-of-a-kind speciality cake. We've had a lot of orders for cakes, but they've all been real simple ones, nothing unique, just basic ones. And I've been feeling a little bummed by it.

So when Ty agreed that I could make him a birthday cake, I was super excited and immediately began brainstorming.

After giving it much thought, I decided on the CONVERSE CAKE. Tyler loves converse shoes. He owns over 30 pairs, in every color and design. Other than his IN-N-OUT flip flops, I've never seen him wear another brand of shoe. Plus, I love shoes too, and I can't turn down an idea of a shoe cake.

I also added the little camera cake, cuz he never goes anywhere without his orange camera.

Don't get me wrong, I like the snow. I like winter. I love hot chocolate, and cuddling by the fire with a book. I love the look of an untouched white landscape of snow, and icicles hanging from the roof. I love the look of bundling up in peacoats, scarves and furry hats. I love the chocolate making, and the baking, and Christmas parties. But I can only take so much of the snow and the cold. I think it should only snow from December 1st to December 26th. After that, it should leave.
This morning, as I stepped outside to go to work, I was taken back by the sight that I saw. My spring flowers were in full bloom. Do you know what that means!? Spring is close at hand; and I am so excited!

My brother Greg took me to the Less Than Jake concert. G gets all in to it; jumping in the mosh pit. I watched from the balcony as my big brother, about 10 times the size of all the little 14 yr olds, starting moshing on the concert floor. It was quite entertaining.

G has a band. Don't ask me the name of it because I don't know, and I'm not sure he does either.

He gave me a tour of his music room, proud to show me all his equipment. He gets real passionate about music, and was more than happy to show off his skills for me.

He wanted me to take some photographs of his equipment and him playing. So these are for him.

12 oz Light Cool Whip

12 oz yogurt of any flavor

Pie crust, or waffle cones

Whip Cool Whip and yogurt together, then pour in a pie crust, or a waffle cone. Freeze.

For this treat, I coated the waffle cones with chocolate, and then garnished with strawberries and kiwi. It is so addicting!

The New Project

I've been battling with the decision of moving out of my parents house and moving in with a friend of mine. The only problem? MONEY and the lack thereof. I've been looking for a second job so that I would be able to afford a rent payment along with my car, insurance and phone bills. But it's been stressing me out. If I got a second job, I would be working six days a week from 8 am to late into the night. I'd lose my social life cuz I'd be working so much just to pay rent. Is it really worth it?

Today I was out with my fam when I decided that moving out right now isn't the smartest option for me. I have a lot of things I need to work on right now, and staying where I'm at is the best place for me to do it.

So, my NEW PROJECT:

I decided that since I'm not going anywhere for awhile, I should make my room my own. I've been living in my parents guest room for the past few years and I don't like the decor at all. So I'm going to redo it all and I am super excited!

Stressed

Have you ever felt like you have absolutely nothing happening in your life, but you feel overly stressed to the point of crying? Yeah. Me too. I was asked a month and a half ago to give a talk in my ward this coming Sunday. When they asked me, I had panic attack right there in front of them. I started hyperventilating and just about started crying. I told them no, I just couldn't do it. I got asked a couple more times. I said no a couple more times. Then they told me I was speaking. I told them fine. This past week I have been preparing for it. I've gone through at least 7 full on panic/anxiety attacks, 6 to 10 full on crying episodes (they all kind of mesh together, so I lost count) and 2.5 chocolate cream pies.

Then there's work and my boss who lacks communication, my room is an utter disaster, I can't find half my shoes... Oh I could go on and on.

An extremely smart friend of mine said to me once "Sometimes it's good to have a bunch of trials happening in your life, it shows you that you're actually progressing." Good ol' Jess, she really is smart.

So despite the fact that I'm on the verge of tears every second of every day and all I want to do is punch my boss in the face, I know I have a lot of blessings and a lot of things to be thankful for. I have a roof over my head, a car that gets me from point A to point B, enough shoes to last me a couple decades, food for my belly, a job that pays me, friends that love me and most importantly I have the big guy upstairs to thank for it all.

When I was little, my mom would take me to go "shoe" shopping. We would go to the mall and look at all the shoes. We never bought any, but we would admire them. I have always had a fascination for them.

When I was 18 I moved to New York owning only 5 pairs of high heeled shoes. A pair of Black, Brown, White, Red, and my black and pink prom shoes. When I was 20, I moved back to Utah owning 80-something pairs of high heeled shoes. And Yes, I do know that I have an obsession.

I was looking through some pictures when I got an idea for a picture. Shoes. I had to borrow some shoes from my friend Tyler to accomplish it, due to the fact I only own 3 pairs of tennis shoes, but that's okay.

I love it because of the tips of the shoes.

My friends and I went and watched the Moguls last night in Park City. I didn't know what the moguls were until last night, but it was fun to watch. I also learned that my snow boots have no traction. I've had them since I was eight. (I'm now 22) and they are still a little big for me. Anyway, I think it's time I invest in some new ones.

I'm finally back to work...sort of... after the longest, and most boring week of my life. We closed for two weeks to "revamp" the kitchen. We got a ton of new equipment, which is super cool. I was lucky enough to work for the first week. I had meetings to go to, some events to cater and was in the wedding show. But the second week. Oh my, I was *insert bad word of your choice* bored.

Yesterday morning at 8 am I was so happy to be back at work, even though my work was cleaning everything and putting the kitchen back together. 15 hours later, I would like to say we were done, but we weren't. It's still pretty messy, but we were too tired to keep going. Here are some before and afters. It's not that exciting, but for a person that cooks for a living, this is like Christmas.

Hot Kitchen: We got a deep fryer. I'm not entirely sure why, we don't deep fry anything, and nobody wants to deep fry anything because nobody wants to clean that thing. I'm also a little...OK, fine, a lot, terrified to use it. I have problems enough getting burned, I don't even want to think what's going to happen if I add a huge fryer filled with boiling hot oil to my problems.

We got an open flame grill top, this I'm super excited about... other than the open flame part. We also cut our 8 burner stove top in half. That I'm sad about. And another awesome addition: The Bain-Marie. LOVE IT.

I found this white pair of heels amoung my shoes. I've never worn them, and honestly I think they're kind of ugly. I picked them up and thought, "what can I do with these?". Well this is what I did with them:

DUCT TAPE

I have become obsessed with the duct tape that comes in all sorts of colors and prints. It's a little weird, I know, but you have to admit how awesome it is.

Well, I'm not working the next couple weeks and I am in complete boredom, so I went out and bought some duct tape.

First project: A pot of orange roses...

I decided to make this for Tyler, for when I visit him in the hospital. I thought duct tape roses might be more manly than just plain real ones. It's difficult to tell in the picture, but I went with orange cuz that's his favorite color.

Anyway, I'm in love with this whole colorful duct tape and have already thought of all the awesome things I can make with them.

I mean seriously, how cool is that!?

Starting a New Year

Like most people I made some New Years Resolutions. I'm kind of excited about these ones and I'm working really hard on keeping them.

Shout Out

I would like to give a shout out to a woman that I admire and strive to be like.

Her name is Jaimie Dyer. (yeah... not the best pic of me, hahaha)
J and I met almost five years ago in New York. We were both nannies and met... well to be honest I don't remember exactly how we met. All I know is that we met and our story began. We had so many good times and I loved that Heavenly Father blessed my life with her friendship. Now J, she's talented. She's got the gift of photography, can cook better than Rachel Ray, can sew anything and I'm pretty sure she's related to Michelangelo.

J became one of my best friends. She helped me through some of the toughest times of my life. She was the one that encouraged me to fix my life up, and supported me through it. I am always amazed at things that girl can do. She is my secret idol and I so very much want to be like her.

J met an amazing man, married him, had an adorable son, and now lives in Maine while her husband serves our country. (GO ARMY!) I haven't seen her in a couple years now, due to our geographical locations and also that I'm extremely poor now, but I think of her often.

So wherever you are and whatever you're doing, Jaimie, know that I love you and miss you!

I feel like this year has been... well weird. Things just haven't gone as smoothly as they normally do, and every holiday just hasn't been quite right. I normally get into the Christmas spirit December 1st, but this year it has taken me until December 23rd to get there. I can't wait to spend time with my brothers and see what everyone got each other.

The one thing I fear the most when doing cakes is the TRANSPORTATION. This terrifies me to no end. You never know what's going to happen. It could fall over half way to the venue (reference to the wedding cake disaster of September 2010). I was nervous about driving this cake and about getting in and out of the car. But to cease your worries, the cake made it to La Caille without a problem!

Day 4

It's all in the details.

The day of detail work.

We spent the rest of the night working on all the little details, making sure it was as perfect as it could be. Surprisingly, we were finished at 10:00pm! I was so sure we would be working late into the night, but we finished earlier than expected!

Tyler and J.R. stopped by for a visit, and just in time to help me put the cake in my car. Thanks boys! You're amazing!

Day 3

People often ask me if I watch those cake shows on T.V, like Cake Boss, or Ace of Cakes. My answer is NO, for two reasons: 1. I don't have cable 2. I've seen the shows, but I think they're lame because it's 20 minutes of drama between the cake makers and 5 minutes of them presenting the cake. I want to see how the cake is made, and I don't mean I want to watch them make it. I want them to explain exactly how they're doing what they're doing. But they don't. So I don't care so much for their shows.

Well, if you watch those shows, you'll notice that there is a whole crew of 10 to 15 people all working on a cake, which is how they're able to produce such amazing cakes in a day. I, on the other hand, don't really have a crew of ten . I have a smaller crew, and I would like to introduce you to them.

You've already met my mom, Sarah. She has been my right hand gal and she is so talented.

This is my brother, Greg. He is what I like to refer to as the NB artist. NB meaning Natural Born. He can draw anything, he can build anything. That kid is a genius (like Rocket Science genius) I asked him to help out cuz I knew he would be able to think of the things I wouldn't, which he did.

Lastly, this my daddy. He doesn't have any talent in the kitchen, and we prefer it if he stays out of it, but he is amazing when it comes to working with wood. He built the 2ft x 2ft wood base for the cake (made out of real wood flooring, mind you).

So there's my crew. We're small and it may take us a week to do one cake, but we get the job done.

Oh and for day 3 we got the Cake on the base with a crumb coat, as well as made all the toys for the Santa bag. Talk about time consuming. Total hours: 10

Saturday was not a good day. With work, the cake and so many other little things piling up on my plate, Saturday was my breaking point. I was at Smith's. In the baking aisle. Staring at the Betty Crocker Chocolate Fudge Cake Mixes. 10 for $10. Should I just give up on the cake from scratch? It wasn't that good anyway. My mother always said I should stick to what I know. And box mix... that's what I know. Then it happened. I just couldn't stop it. I was that weirdo that breaks down in public.

Let's stop here. I want to say something about my mother. She is amazing. I honestly don't know what I would do without her. She has seen me at my best, and she has seen me at my worst. There has never been anyone in my life that has been able to calm me down, or simmer my fears the way she can. Call me a nerd, or a loser, but she is my ultimate best friend, and I am so grateful that God chose her for me.

Ok, with that said, back to the story. So I tell my mom I'm giving up. I'm not doing the competition. I don't know how to make a good chocolate cake from scratch and there is no more time to experiment. It is here that my mom suddenly looks up at me and says,

"I can't believe I didn't think of this before.

Beth, at this point, you gotta stick with what you know."

(I'm rolling my eyes, because she has said this to me countless times, so I'm confused at why she thinks she hadn't thought of it before.) My mom begins sifting through all our recipes (when I say this, I mean Our Recipes. The recipes we don't give out. The real family recipes.) and she pulls out this recipe:

Last month, I got a text from my friend Sarah about going to the midnight showing of Harry Potter #7- Part 1. I told her to count me in, and then totally forgot all about it. The night before the movie, she reminded me all about it. Here's the kicker: I had to work a triple the next day. So I would be up all day, then go to the midnight showing, sleep for a couple hours, then work all day, sleep a couple of hours, then go back to work. Yeah, I was really tired.

Oh, and we dressed up for the movie. I was a Muggle.

Have you ever built a 2ftx2ftx2ft cake? Neither have I.
I have spent the past couple weeks rolling this competition in mind, trying to find the right kind of cake flavor, the right design, the right colors. How do I keep the cake from falling over? what structure would work best? How do I color it? With such a large amount of fondant, how do I color it all so that it's all the same? Should I paint it? How do you that? How do I prevent gravity from taking over and having a puddle of fondant at the base of the cake? How do I transport the damn thing? Hell, what should the thing even look like?
I have been experimenting everyday trying to figure it out. I have made at least thirty different cakes, most of which have ended up in the garbage can. Though I think I got one that should be at least somewhat acceptable. I have tested coloring fondant. Do you know how hard it is to get the right color of red? I've had to mix like 7 different colors just to get the color I wanted... only to not remember how much of each color I'd used. I've experimented with painting fondant. That ain't as easy as it looks on T.V. At least not for an amateur that doesn't have any of the proper equipment or the know how.
I have no idea how this thing is going to turn out. I'm excited for it, and yet completely terrified. Two weeks to go!

La Caille Fantasy Dessert Contest

So, the other day I'm at the mall with my mom when my phone rings. It's my boss. I immediately start running through my head of all the things he would be calling me about. Am I in trouble is the first thing that comes to mind, the second is maybe they need me to work. After a quick assessment, I decide to answer. Might as well find out what he wants and if I don't like where the conversation is going, I could just hang up.
So I'm standing there in the mall listening to my boss talk, and I'm surprised to hear him say the words, "There is a cake competition, and I want you to enter."
Now, I like to make cakes. However, I'm a complete amateur and usually just make things up as I go along. So me entering a cake competition... Let's just say I lack confidence in myself.
Dave, (that's my boss) begins telling me what it's all about. The National Opiate Recovery Foundation is hosting a fundraising event at the La Caille where there are several different auctions and events. One of them being the Fantasy Cake Contest. Dave was invited to enter, and now is asking me to help him. The Cake will be judged on taste, and looks, and everything in between, and I will be competing against Chefs that have been doing this for decades. Can you say nerve racking!
Well, I said yes. I'm honored that I get to even be a part of something like this, working along side professional chefs. It's a great opportunity and I just can't pass it up.
So wish me luck, I'm going to need it!

Every time we go to California, we take a day to go to Olvera Street and get some taquitos. It's been a tradition since my dad was a little boy, and we have successfully been able to continue the tradition!

Olvera Street is this really old Mexican street. There are all these booths were you can buy all sorts of odds and ends. Purses, clothing, jewelry, toys. You never know what you can find there.

My cousin Ted got married on Saturday, September 4Th. It was a day of mishaps. My mom was doing the wedding cake, as her gift to the couple, but things just didn't quite go as planned. The cake was to be a 4 tiered cake frosted in butter cream and was to be at the venue by 2. The couple was getting married at 4 and the reception would be right after, which the cake would be cut at 6. My mom worked for hours on it, and when it came to transporting the cake to the venue... well let's just say the cake didn't make it out of the driveway. It was so hot outside and the cake was so tall, that the bottom tier just fell. My poor mom was in hysterics. All the tiers were smashed on one side, and there was frosting everywhere. I did what I could to salvage it. I was able to save three of the tiers, and a nice man at the wedding went out and bought some Styrofoam to make a false bottom tier. My mom and I spent the whole wedding ceremony doing what we could to re frost the cake. It wasn't the best job, but with only two hours to fix it, I think we didn't pretty darn good salvaging it.

Even though the cake was smashed, people still thought it was good, and were eating it right off the floor.

The weather was in the 100's all weekend long. We were melting and decided that on Monday we would go to the beach. We arrived in Newport Beach only to discover it was overcast, cold and windy. We huddled on our chairs with our towels wrapped around us.

After about 20 minutes, we couldn't take it any longer. We drove down to my cousin Dave's house and went to Laguna Beach instead, where the weather was much nicer.

Kris had his annual Midnight Canoe Trip this weekend. Another exciting time at the cabin. We ate dinner, played Nerts and of course, went canoeing.

It rained the whole time we were up at the cabin, but did that stop us from going out in the canoes? HECK NO!!

I went to Girls Camp. Why? Because I felt like it.

My mom was Assistant Ward Camp Director this year. I had a few days off from work, so I figured, "What the heck? I got nothing else going on." It started raining buckets, and hailing too. It stayed that way throughout the day and the night.

Our awesome tent! Everyone called it the Taj Mahal. We had gold curtains, a luxurious bed, a rug and fancy tassels on all the zippers. We even bought palm leaves to wave in case we got too hot. I discovered the night setting on my camera, and thought this picture was cool.
Our palm leaves! Ok, this is the story: we were shopping for a tent at Costco when we came across this great invention. A camping oven. It had an oven and a stove top. How could we resist!? We bought it and took it to camp where we baked ourselves some cookies.

Last Sunday, I loaded onto a bus along with 115 adults from my singles ward to embark on an adventure across America to Nauvoo, Illinois. It was quite the week of traveling.

We traveled through Sunday night and into Monday morning. To entertain ourselves, we slept a lot and had coloring contests. Monday was mostly traveling. We stopped in Winter Quarters and Kanesville, then headed to Independence to stay for the night. Tuesday we visited the RLDS Temple.It was interesting to tour through their temple. Across the street we visited the Temple Lot Site, and our visitor center. It was amazing to feel the difference between the RLDS temple, and our own vistor center. You could feel the spirit so prominently.

Liberty Jail was next. It was a little odd, only because it's a building within a building, but it was still interesting to see where the prohpet was inprisoned.
We traveled to Far West next to see the temple site.
Here, I was running around, only to have my shoe sink in mud... it wouldn't be the first time, and it definitely wouldn't be the last time for the trip.

We stayed in Cameron for the night. I don't know where this place is, but it was by a walmart. :)

We got up bright and early Wednesday morning and went to Adam-ondi-ahman. Watch out for ticks.

Welcome to Carthage Jail. We were taken in groups to tour through, and it was amazing to stand in the building where Joseph Smith's life was taken. He was such an amazing man.
Welcome to Nauvoo! After what seemed like days (haha, because it was days) we arrived in Nauvoo. It is such a beautiful place!

After two days in Nauvoo, we boarded the bus again and headed back West. 23 hours later we arrived in the church parking lot, ending our awesome adventure.

My mom recieved an order for another wedding cake. The bride wanted the top two tiers to be made out of rice krispie treats and the bottom to be regular cake. It was definitley a frustrating cake to do. Mom made homemade fondant for it, which was a mess, and I had to make all the little balls which was a killer for my palms. Luckily we had Jessie to help out. She's very detail oriented, so she was able to point out things we missed (Thanks girl!). All in all, it turned out pretty well.

THE CAVE

THE TEXT: Sushi at 7 in Ogden. Bring dirty clothes because we are going to go to some caves around 9.

What caves do you ask? Answer: I don't know.

Do I bring dirty clothes out of my hamper or clothes to get dirty in? Answer: I don't know, though I'm assuming the latter.

Will I show up because Jessie told me to? Answer: Yes

The boys took us on a "little" hike up to some cave in Ogden. Don't ask me for directions, I wasn't paying attention. After an hour or so hike, we reach the cave. Now, maybe it's my lack of imagination, maybe it's the effects of watching movies, maybe I'm just an idiot, but when I heard the word cave, I pictured this:

This is not what The Cave looked liked. It was a lot less...open.

So we get to the mouth of cave, and I'm the first one in. I'm staring into it. The thing is a hole. That you have to crawl through. They want me to go in that?

Now, I never considered myself a claustrophobic person. I've been in some tight spaces before, and I've been just fine. Have you ever been stuffed into a duffel bag packed with snow and rolled down a hill? I have. Not a big deal. Staring into the mouth of this hole, however, made me panic. But everyone started coming in, pushing me farther in the cave. So I went with it. I didn't want to be left out, so I crawled in.

Getting in wasn't so bad. I got stuck only once. Panicked a little. A few cuss words and some tears later, I was unstuck, all thanks to Taylor, who supermaned his way across the rocks to help me. The goal was the cave room. I made it.

I'm sitting in this cave, thinking, "Wow, I really hope an earthquake doesn't happen right now that makes the cave collapse." -Hyperventilate- "and I really hope there isn't some cannibals that are living down here like in the movie the Descent, cuz that would really put a damper on the situation."

Getting out... well that's where things got complicated. First we have to climb up this rope through this little hole. I slipped, hit my head, and Cameron had to save me. Once I got through that, I had to shimmy through this space that my hips barely fit through. I climbed up farther to the next ledge, only to have my foot slip. I was doing the splits, stuck between rocks. Let the panic attack come. Let the tears roll. Cameron and Dan got me through that... only to have me slip on the next part, lodging my hips and my thighs between some other rocks. Panic again. Dan and Cam to the rescue... again. Got out of that one, and finally out the tricky parts. Of course in my rush to get out, I hit my head again, but I made it out.

What we learned: I'm claustrophobic.

I have been experimenting with homemade fondant lately and have made a few discoveries:
1. Homemade fondant is simple but yet not.
2. Lots of patience is required.
3. Melting marshmallows for 3 minutes straight in the microwave creates interesting results.
4. Purple dye stains your hands a purplish color.
5. Despite what all the youtube videos say, powdered sugar doesn't just brush off fondant so easily.

My Practice Cake:
I wanted to play a little with the fondant, and so I made my good friend, Jessie, a cake in celebration of her graduating college in a week.

Oh and, YES... Congratulations is spelled wrong. It's funny, just laugh.

Two words: CONFERENCE WEEKEND. The weekend was a blur for me. Up early, working late, running around, low blood sugar, annoying customers, appliances breaking, lots and lots of burns, endless lines. The list goes on and on.

STUPID CUSTOMER OF THE DAY: A women came in that was allergic to seafood. I will repeat: She was allergic to SEAFOOD. Got it?

Stupid Customer: "What are your soups today?
Me: "We have Salmon Chowder and Beef n Barley."
Stupid Customer: "I'm allergic to seafood. Is there seafood in the Salmon Chowder?"
Me: "Yeah, there's salmon and clams in it."

EMPLOYEE HUMILIATION DAY

Today is Employee Humiliation Day....and what better way to celebrate it than by making your employees dress up like pioneers and serve people food?
The head honchos of the company decided today we would work in "authentic pioneer clothes" just to see how it looked, and if we should make it a more permanent thing. Can you say HUMILIATING?

It is officially spring! LOVE IT!!!! Though it's still a little chilly outside, it's so nice to have the sun shining bright, the days lasting longer and the beauty of nature making it's way back. And with all this sudden energy, I have found myself in cleaning mode.
My mom and I have spent the past few days cleaning every nook and cranny. We decided it was time to get rid of the junk that has been accumalating over the past few years. Clothes, shoes, old electronics, books, and random odds and ends have been put in the give away pile.
REALIZATION: I have way too much stuff.

BOOK NERD

If it seems that I haven't been around much lately... it's because I haven't been around much lately. Last spring, I got involved with a tv show that played on Sundays. It is one of those nerd shows that only runs at times no one would be around to watch it, but what can I say? I was bored, there was nothing on, and it was somewhat entertaining that after I watched one episode, I had to see what was going to happen next.

I found out that the show is based on a series of books... if you don't know me well enough yet to understand the meaning in that, I'll just tell you now. If a show or movie is based on a book, I have to read the book before I start, or even finish the show. A weird habit I developed back in grade school, when I found out my favorite movie, the Princess Bride, was based on a book. After reading the book, I discovered the book and the movie were nothing alike. Since then I always try to read the book first, because it's the original.

So the past month, I have spent holed up in my room reading this new series of book, The Sword of Truth. Last night I finished the final book. As proud as I am of this accomplishment, I have also realized that I am huge nerd.

As I said in my previous post, my car had an issue that my friend fixed, the timing belt broke. I got my car back and I was driving it to work on Monday. I only made to Centerville. Turns out there were two problems with the car- the timing belt and the crank sensor or something like that, which wasn't throwing codes, so it went undetected, whatever that means. SUPERMAN KRIS to the rescue again. He explained the problems to me in his superman car lingo, which I nodded to as though I understood what it all was. Anyway, my car is back again. We took it for a test drive to Salt Lake and it ran smoothly. Cross your fingers that it will stay fixed and another problem won't surface!

My mom is in charge of the food committee for her Relief Society. They had an event this week so my mom asked me for help. For the dessert, we decieded to make cakes and use them as the centerpeices for the tables. they're not super fancy, but here they are.

This one is a white cake with a Raspberry and Blackberry mousse filling. Decorated with Buttercream frosting, raspberry and white chocolate sauce and fresh fruit.

This is a yellow cake with chocolate ganache filling decorated with chocolate frosting and chocolate ganache with chocolate clay flowers.

This is a strawberry cake with a strawberry mousse filling decorated with buttercream frosting and strawberries.

This is a chocolate cake with mint buttercream frosting filling, decorated in chocolate ganache.

This is a lemon cake with a lemon pudding filling, decorated with whipped cream frosting and fresh fruit.

This is a chocolate cake with caramel filling decorated with chocolate buttercream.

I HATE MY NEW CAR

So last August I crashed my Honda Civic and had to get a new car. I said goodbye to Little Red and welcomed Jag Jr. I purchased a Hyundai Sonata and it's an alright car. It gets me from Point A to Point B, but as everyone around me has said, the car just doesn't quite fit me. It's not a Beth Car. But it's a car that works... or DOES IT???
I was driving home from work this afternoon going through all the construction. As I started to accelerate to get up to speed with traffic, my car started lunging. That's right, lunging. I drive an automatic but it was acting as if it was a stick shift. It wouldn't change gears. Then it just started slowing down. I pressed on the gas and the car slowed down even more and began making clicking sounds. I'll admit I was scared out of my wits. I quickly moved to emergency lane and parked the car. The engine wasn't even running, but I hadn't even turned the car off yet. So I turned the car off and turned it back on, but nothing happened, the engine wouldn't start.
I don't know what's wrong with it. I left it on the side of the freeway for my friend, Kris, to pick up. So I'll let you know what happens.
Point is, I don't like my new car and I miss my little red Honda.

Max doesn't like me, and he's made it very clear that he doesn't. No matter what I try to do to get him to like me, it never works. But he always favors my gifts above everyone elses. Shove that in your face mom! haha, my motorcyle gift was his favorite!
